Ingredients for making pepperoni stuffed potatoes:

 4 large potatoes (washed)

 1 cup of pepperless sausage (smoked type) without skin, cut into cubes

 ½ small chopped onion

 ½ cup cream cheese

 1 cup of mozzarella cheese (grated or chopped)

 fine herbs (to taste)

 pepperoni pepper (optional)

 Salt and black pepper to taste)

 Chopped parsley to taste)

 rosemary (to taste)

 grated parmesan cheese (to taste)

 olive oil (to taste)

How to make Potatoes stuffed with pepperoni:

Set aside the necessary ingredients to prepare this barbecue stuffed potato recipe.

Cook the potatoes with salted water in a large pot for about 20 to 25 minutes, or until the potatoes are slightly tender, without letting them get too soft. Once they are cooked, remove them from the water and let them cool a little in a container.

Tip: The potatoes will have to be firm in order to continue the recipe, so stick a fork in to make sure they are in the right spot.

In a skillet, heat the olive oil and add the pepperoni in cubes with the chopped onion. Let it cook until lightly browned. Drain and set aside.

Tip: Reserve some braised pepperoni to decorate the potatoes when serving!

Cut a cut along the top of the potato, lengthwise, as in the photo. Repeat the process with all potatoes.

Remove the inside of the potato with the aid of a spoon, forming a kind of canoe, without letting the sides get too thin. Reserve the potato you removed from the center so that we can use part of it in the recipe.

Tip: To make the process easier, wrap the potatoes in foil as shown in the photo below. At this time, preheat the oven to 180 - 200 degrees.

Mash the potato that was reserved and set aside half of it for us to use in the recipe as part of the filling. What's left, you can use preparing a delicious puree.

Season the inside of the potato with salt and pepper and set aside.

Tip: If you like, add another seasoning, such as spicy or smoked paprika.

Mix the reserved mashed potatoes with the sauteed pepperoni, cream cheese, grated mozzarella, fine herbs, chopped parsley, salt and black pepper. Stuff the potatoes, keeping the foil, and arrange inside a mold.

Garnish with grated Parmesan cheese and rosemary and bake to brown for 20-25 minutes, or until the stuffed potatoes are lightly browned.
